When a transfer is reversed, the Delete Last Transaction process will delete the child asset created as a result of the transfer. Unless it was the last asset, this will create a missing "hole" in the numbering scheme of the system numbers as they appear in the database.
Recommendation: instead of deleting the new asset, inactivate it.
